True San Marzano tomatoes are grown in the shadow of Mount Vesuvius near Naples. The volcanic soil is rich in minerals, and the distinct Mediterranean climate creates a tomato that is elongated, fleshy, and contains fewer seeds. Most importantly, the skin is thin and easily peeled, dissolving effortlessly into sauces.

The Flavor Profile
